Roasted Beet Salad with Orange and Pistachio Nuts


Ahh...Beets. Growing up I hated them. It was the "green eggs and ham" for me.

I do not like them, I do not like them, Sam-I-Am.

Then for Christmas one year, a family member of mine made this roasted beet salad, and I. WAS. HOOKED. The most awesome thing about salads (and in my opinion, soups, too) is that you can make any variation of this to your liking!


If you are like me and you are unsure about jumping aboard the beet train full steam ahead - let me try to sway your opinion by giving you the run-down on this Super Food.



Beets are a...

  • Good source of iron, magnesium and folate

  • Contain anthocyanins, which can help prevent some cancers - especially gastrointestinal, breast and lung cancers

  • Contain nitrites, with prevent blood clots

  • Contain Betaine for a healthy liver and other anti-inflammatory properties.

Roasted Beet Salad with Orange and Pistachio Nuts

Ingredients

  • 4 cups Spring Salad Mix

  • 3/4 cup Goat Cheese, crumbled

  • 1/2 cup shelled Pistachio nuts, crushed or chopped

  • 1/3 cup red onion, diced

  • 1 whole orange, peeled and cut into chunks

  • 1 cup roasted beets (or you can use pickled beets)

  • 1/2 cup dried cranberries (optional)

Combine all ingredients in a large dish and serve immediately with a creamy dressing


I use an Onion Vinegarette which pairs nicely with this salad.



I do like beets, I do, Sam-I-Am!
